Breakfast on the go? This burrito will put a smile on even the sleepiest of travelers.
Careful not to overfill this burrito or the roll up will be difficult.
4 pounds Jimmy Dean sausage (hot optional)
4 pounds Cheddar cheese, shredded
28 ounces frozen
hash brown potatoes (Ore-Ida Potatoes O'Brian)
1 pound stir fry peppers (Bird Eye frozen)
4 packages flour tortillas
8 ounces mushrooms, sliced
butter for frying
picante sauce for dipping
* Crumble fry the sausage until almost done, drain, and reserve.
fry the eggs until a creamy state of doneness. Reserve.
* Prepare potatoes per package instructions. Reserve.
Stir- fry peppers until caramelized. Reserve.
* stir- fry or combine all ingredients together, EXCEPT CHEESE, warming
together with mushrooms.
* Fill tortilla with serving of cheese, serving of egg mixture. DO NOT OVERFILL.
all 40 tortillas in the same fashion and serve with picante' sauce.
