Servings 40 This recipe was created by McCormick,
Inc. Layers of nilla wafers, creamy pudding and fresh banana slices are the stars of this American classic. This
recipe will fill (1)2"steamtable pan or (2)half pans (serving 40) 3 cups sugar 2 cups flour 3 dashes salt 18
large eggs 12 cups milk 1 tablespoon vanilla extract 2 boxes vanilla wafers 10 med bananas sliced 2
packages (8 oz.) "Cool Whip" whipped topping
*Mix sugar, flour and salt in double boiler. *Blend
in egg yolks and 1/4 of the milk until smooth. (reserve egg whites for angel food cake, etc.) *Blend in the rest of the
milk until a smooth liquid is formed. *Cook uncovered, in double boiler, stirring constantly for 10-12 minutes from the
time it starts to coat the spoon. *Remove from heat and stir in vanilla. *Spread a small amount of custard on the
bottom of two (2") steamtable 1/2 pans serving pan. *Cover pan(s) with wafers and sliced bananas. *Cover wafers
and bananas with hot pudding. *Repeat layering with remaining wafers, bananas, and pudding. (ending with a covering of
pudding) *Cool 30 minutes on counter, then cover surface of pudding with plastic wrap, and refrigerate until ready to
serve. *Serve by covering pudding with Cool Whip and garnish with several crushed vanilla wafers.
